Mix together mashed potatoes and butter,
then stir in grated potato and eggs
Sift together flour, baking powder, salt, and pepper,
then blend into potatoes
Heat a small amount of oil or butter (over medium heat)
in a heavy fry pan or griddle
Place about 3 Tbsp. of potato mix per pancake into the fry pan,
flattening slightly. Cook 5-10 minutes on a side, until browned
(Alternate) Knead potato mix and flatten out with foured hands
to a large round, then cook at medium-low heat 15-20 minutes
on a side, until browned, cut in farls (quarters) and serve
